Almond and Herb Salad

Almonds are a great source of protein, as well as being full of calcium and magnesium – two essential minerals for healthy bones, and healthy muscle function. There are several “good oils” present in almonds such as the main Omega-6 fat linoleic acid. However the majority of oil in almonds is the omega-9 fatty acid, oleic acid – the same fat we find in olive oil. So, all in all, almonds are an exceptionally healthy food to regularly include in your diet… just don’t roast them or buy them roasted or salted!

Serves 2
1 bunch (or good handful) of fresh coriander
1 bunch of fresh parsley – you can use flat-leaf or curly parsley
2 spring onions, thinly sliced
½ punnet ripe cherry tomatoes, halved
1 small ripe avocado, stoned, and the flesh sliced, diced and then scooped out
1 cup of organic almonds
Juice of one lemon or lime
1 dessertspoon extra virgin olive oil
1 tsp honey
½ tsp of sea salt or rock salt

Rinse the herbs well, and shake dry. Chop the herbs finely into a bowl, and then add the spring onions, tomatoes, and the avocado. In a food processor or blender, whizz and grind the almonds until broken into small pieces. If you don’t have a blender, just use the back of a carving knife to break the nuts into small pieces. Add the almonds to the herbs and vegetables. Finally in a small bowl, mix the lemon juice with the oil, salt, and honey. Pour over the vegetables, mix well and serve. This salad is utterly delicious!
